    Again this year (2009) we have made a Verjus.     price reduced    $9.00 (500ml bottle)
    Released 21-Nov-2009; available at the winery, and at our table at the Bainbridge Farmers Market. Verjus is the non-fermented juice from underripe grapes. It can be used in cooking whereever you would otherwise use lemon juice.

    Like wine, verjus gets it's tartness from malic and lactic acids, as opposed to lemon juice which is comprised of citric acid. This means that food cooked with verjus, when served with wine, will not have the metallic clashing that a citric-based tartening agent may have.
